Ingredients:

- Spinach (2 cups)
- Butter (1 tsp)
- Garlic paste (1/2 tsp)
- 1 tsp all purpose flour
- 1 cup milk
- Salt and pepper to taste
Method:
- Blanch 2 cups spinach and grind to make fine paste.
- In a pan, heat 1 tsp butter and saute 1/2 tsp garlic paste.
- Saute spinach paste for 3 minutes.
- In a separate pan, heat 1/2 tsp butter and saute 1 tsp flour for 2 minutes. Ensure that the flour doesnt change color.
- Take off the pan from gas stove and pour 1 cup milk.
- Mix well.
- Return the pan on fire on medium heat stirring constantly to avoid formation of lumps. Cook till it resembles custard. This is our white sauce.
- Mix the white sauce in the spinach pan and add salt and pepper.
- Cook for 5 minutes.
- If the soup gets thick add some more milk or water.
You can also add cream before serving but this is purely optional depending upon your taste.
