If you want to add cream, you need to cut down the quantity of milk to half and add cream just before taking the soup off the flame.
- 2 cups roughly chopped cauliflower
- 1 finely chopped onion
- 1 tsp finely chopped garlic
- 1tsp butter
- Salt and black pepper to taste
- 1 glass of milk
- 1/4 cup of water
- 1/2 cup cream (optional)
Method:
- Saute onion and garlic in 1 tsp butter till onions are tender.
- Add cauliflower and saute for 5 - 7 minutes.
- Add salt and freshly ground black pepper and saute for a minute. You will need a glass of milk for this.
- Add little milk or say half of it and with the help of electric blender blend it to form a smooth paste.
- Add remaining milk and 1/4 cup of water.
- Cook for 15 minutes on low flame.
- Serve hot.
