A useful tip while making caramel sauce

During the last workshop conducted at Park End by Samana Mustafa, she had prepared caramel. To make it easy, just add 1/2 tablespoon lemon juice while caramelizing sugar. It will prevent crystallization of sugar. For the benefit of those who are new to caramel sauce, here is a recipe:

Ingredients:
1/2 cup sugar
2 tbsp water
1tbsp butter
1/2 cup cream

Method:
  1. Put sugar in a pan.
  2. Place the pan on medium heat, and add water
  3. Let the sugar dissolve by itself, and then add lemon juice. Do not use spoon to mix sugar. Just shake the pan. Do not ever leave the pan even for few seconds as at this stage sugar changes its color very fast. 
  4. Go on moving the pan so that the sugar water syrup is stirred.
  5. At one point, you will notice smoke coming out. This is the point where you should immediately remove the pan from heat.
  6. Add cream and butter and now stir with a spoon.
  7. Return to fire and stir continuously till the required consistency. 
  8. Cool and refrigerate. 
Voila! You can then enjoy on ice creams, fruits, chocolate center fillings or just on biscuits.
